Pretty much anything you want to add or subtract to your liking
Instructions
Stab your sweet potato a few times with a fork or knife and microwave it until it's soft - 3ish minutes
Heat up your beans and soyrizo and kale and emamame (kale and edamame in a separate pan)
Heat up your tortilla on on open flame (or leave it how it is if you have a electric stove) and smash and speard the sweet potato on one half and smash and spread the beans and soyrizo on the other half.
Add in your cooked kale and edemame
Fold it half and heat in a pan to get it a little crunchy on the outside
Chow Down!
Notes
This is so very quick and easy to make and it’s totally kid friendly especially if you and your kiddos like regular chorizo. I know meat eaters who say this tastes like the real deal if not better.
