1Tablespoonof medium-high heat oilavocado, grape seed, sunflower, etc.
2Tablespoonsof sesame seeds
1Tablespoonof potato starchoptional, but makes fries extra crispy
1Tablespoonof nutritional yeastoptional
Generous pinch of saltto taste
Black pepper to taste
Instructions
Preheat oven to 425 degrees F. Lightly oil metal baking sheet, or cover with parchment paper. Toss potatoes in all ingredients until coated, if seeds don't stick, drizzle with a bit more oil.
Spread potatoes on the baking sheet in an even layer (the more room between the wedges the better) and bake for 20 to 25 minutes, flipping once halfway through, until potatoes are golden brown and crispy. Serve immediately with condiments of choice.
Notes
Cut uniform pieces. Make sure that the potato wedges are uniform in size, so they bake evenly in the oven.
Use just enough oil. If the sesame seeds are not sticking to the wedges, add a bit more oil. Make sure you do not add too much, though, or your potatoes will get soggy.
Space the potatoes evenly in the pan. The more room between the wedges, the better. That allows the hot air to circulate better, making them super crisp. If you have a small pan, you can bake in batches instead.
Adjust baking time, as needed. The baking time may vary depending on how thick your wedges are. Test if they are baked through by sticking a toothpick into the thickest part of the wedge. If it pierces through easily, you can take them off the oven.
Let the baked fries rest. Rest the baked fries on the pan for a few minutes before transferring them to a serving plate.
Add more flavor. You can add more flavor to your wedge fries by mixing in your preferred herbs and spices. Paprika, chili powder, garlic or onion powder, and parsley are some good choices.
