This Chocolate Dipped Peanut Butter Cracker Sandwiches recipe is an easy, dangerously addictive, no-bake snack. With just a few ingredients, you can whip up a batch in just 10 minutes. Instructions
Create peanut butter sandwiches using peanut butter and crackers. Keep the peanut butter on the thinner side.
Melt the vegan chocolate chips and line a baking tray with parchment paper.
Dip each peanut butter sandwich into the vegan chocolate and line them up on the baking sheet.
After coating all the cookies, put the tray into the fridge for 30-45 minutes. Keep chilled until you serve.

Add sugar for sweetness: I used peanut butter that already has some sugar in it, but if you use natural peanut butter, you can opt to add in a small teaspoon of powdered sugar.
Stir peanut butter first: Stir the peanut butter into the jar to distribute the oil evenly before spreading onto the crackers. Scooping the topmost part without stirring it first may cause the sandwiches to be oily and the cracker soggy.
Melt the chocolate with a bowl: If you do not have a microwave or broiler to melt the dairy free chocolate, you can improvise. Place the vegan chocolates in a small bowl and set that on top of a bigger bowl filled with hot water. Stir until the vegan chocolate chips melt nicely and smoothly. Vegan White Chocolate: Instead of using regular vegan chocolate, you can replace it with white chocolate or use a mix of chocolates! You can try dipping them half and half (let one half solidify fully first). You can also use white chocolate to decorate your Chocolate Dipped Ritz Sandwiches by drizzling it on top of the chocolate coating too.
Sea Salt Flakes: Top it with sea salt flakes. That extra saltiness will go really well with the sweetness of the vegan chocolate and the richness of the peanut butter.
