green grapes
finely chopped or quartered

red onion
finely diced
1
jalapeño
seeded and minced (leave some seeds for more heat)
¼
cup
fresh cilantro
chopped
Juice of 1 lime
(about 2 tablespoons)
Salt
to taste (start with ¼ teaspoon)
Instructions
In a medium bowl, combine the chopped grapes, red onion, jalapeño, and cilantro.
Squeeze in the lime juice and sprinkle with salt.
Mix well, then let sit for 10–15 minutes to let the flavors meld.
Taste and adjust salt or lime juice if needed.
Serve chilled with tortilla chips, over vegan tacos, or alongside grilled tofu or tempeh.

Notes
Don’t chop the grapes too chunky
: Depending on their size, I usually quarter or finely chop the grapes.
Let it ‘rest’
: During this time, the flavors will meld/marinate for the best flavor and texture.
Adjust the texture
: Optionally blend ¼-⅓ of the grapes for a juicer, pulpier consistency.
