First, slice the lemons or collect the lemon peels/scraps, then add them to a medium saucepan with the water, rosemary, and vanilla extract (if using).
Bring to a boil, then reduce to low and gently simmer for 20-30 minutes, or until the kitchen smells fresh and fragrant.
For a simmer pot: Check on the pot every 30-40 minutes, adding more water as needed to prevent it from drying out. A slow cooker works too.For a homemade deodorizer spray: Cool completely, then transfer the lemon rosemary air freshener to a bottle (a funnel may help).
