These peanut butter stuffed dates bring together sweet chewy dates and creamy peanut butter, encased in a crisp vegan chocolate layer. This simple but nourishing and sophisticated treat to satiate your sweet tooth takes only 10 minutes of prep!
Slice the medjool dates halfway lengthwise the length of the whole date, but make sure to not cut it all the way through widthwise.
Fill the center of each date with a spoonful of peanut butter.
Dip half of each stuffed date into the melted vegan chocolate.
Sprinkle the melted vegan chocolate with chopped peanuts and sea salt (if using). Place in the freezer for at least an hour and enjoy frozen.
Notes
Fridge: The stuffed dates can be kept in the fridge for up to a week, sealed in a Ziploc/Stasher bag. You can enjoy them straight out of the refrigerator.Freezer: You can also keep them frozen for 1 to 2 months in a freezer-safe bag or container. Let them sit at room temperature for a few minutes or overnight in the fridge before serving.
