This luscious avocado cream is similar to mayo, but so much better. Unlike mayo there are NO added oils, eggs, cholesterol, or additives. Just pure ripe avocados, a little bit of water, and some simple ingredients.
1teaspoonof apple cider vinegar (or white vinegar)
1Tablespoonof lemon juice
2Tablespoonsof fresh parsley
1 ½teaspoonsof salt
Combine all ingredients in a food processor and blend on high for 30 seconds, scraping down the sides as needed until a thick cream is formed. Will be similar to mayo in consistency but tastes a lot better, and is incredibly nutritious. Put it on sandwiches, use as salad dressing, dip french fries in it, eat it with a spoon!
Put it on sandwiches, veggie burgers, salads, even spread it on your toast. It’s topping a stack of our amaranth patties in the photo above, and they do make a nice pair! Keeps for a few days in the fridge.
