Make the best polenta fries at home! They’re perfectly golden on the outside and fluffy and tender within, using packaged polenta for a quick, easy, satisfying snack or side ready in just 30 minutes.
Preheat the oven to 450 degrees F (232 degrees C. Line a baking sheet with parchment paper or a silicone mat.
Remove the polenta from its packaging and pat dry. Slice into bite-sized French fry shapes, keeping the pieces evenly sized.
In a large bowl, whisk together the olive oil, salt, pepper, and Italian seasoning.
Working in batches, add a few fries at a time to the oil mixture and gently toss to coat evenly. Place the coated fries on the prepared baking sheet in a single layer.
Repeat until all fries are coated and arranged on the baking sheet.
Bake for 15 to 20 minutes, or until the fries are golden and slightly crisp.
Remove from the oven and serve hot with your favorite dipping sauce or an extra sprinkle of salt, if desired.

For the crispiest polenta fries: Pat the polenta dry, if needed, use oil, and avoid overcrowding the baking tray (which causes steaming!).
