of unsalted vegan butter
melted

of creamy peanut butter

of all-purpose flour

of granulated sugar

of baking soda

of unsweetened plant-based milk

of unsweetened applesauce
Instructions
Preheat the oven to 350 degrees F (175 degrees C) and grease an 8x8-inch round baking dish. Set aside.
In a large bowl, whisk together the boiling water, melted vegan butter, and peanut butter until smooth and fully combined. Set aside.
In a medium bowl, mix the flour, sugar, and baking soda.
Add the dry ingredients to the wet mixture and gently stir until just combined.
Add the plant-based milk and applesauce. Stir again until fully incorporated, being careful not to overmix.
Pour the batter into the prepared baking dish and spread it out evenly.
Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 30 minutes, then transfer to a cooling rack to cool completely.
Optionally, frost with homemade vegan peanut butter frosting before serving.
Notes
Use creamy peanut butter
: Avoid natural, oily varieties, which can affect the texture/density of the peanut butter snack cake.
Measure flour accurately:
To avoid a dense/dry cake. Fluff it in its bag with a fork, spoon it into the measuring cup, then level with a knife.
Don’t over-mix the batter
: Mix until only just incorporated (a few tiny lumps are fine), otherwise the cake can become dense/rubbery.
