3Tablespoons (45 ml)plant-based milkplus more as needed
1teaspoon (5 ml)peppermint extract
4cups (480 g)powdered sugarplus more as needed
2cups (340 g)vegan semisweet chocolate chips
Instructions
Line a baking sheet with parchment paper or a silicone mat and place it in the refrigerator.
Add the plant-based milk, peppermint extract, and powdered sugar to a large bowl.
Beat with an electric mixer until it forms a smooth dough that feels like play dough.
If the dough is too sticky, add more powdered sugar ¼ cup (30 g) at a time. If it is too dry, add more plant-based milk 1 Tablespoon (15 ml) at a time.
Scoop 1 Tablespoon of dough, roll it into a ball, and flatten it into a ½-inch (1.3 cm) thick disk.
Place the disk on the chilled baking sheet and repeat with the remaining dough.
Refrigerate the disks for 1 hour.
Add the vegan chocolate chips to a small microwave-safe bowl.
Microwave for 30 seconds, then stir. Repeat until the chocolate is completely melted and smooth.
Using a fork, dip one disk into the melted chocolate and let the extra drip off.
Place the coated patty back on the baking sheet and repeat with the remaining disks.
Refrigerate for at least 2 hours, until the chocolate is set, then enjoy!
Notes
Chill the patties well so they hold their shape and the chocolate sets faster.
Add a little more or less peppermint extract to suit you. A little goes a long way!
For a smoother, shinier coating, stir a spoonful of coconut oil into the melted chocolate.
Prefer the stovetop? Melt the chocolate in a double boiler instead of the microwave.
