These Chocolate Peanut Butter Protein Popsicles are tasty homemade treats made using 3 simple ingredients. A nutritious, protein-packed snack recipe rich in chocolate and peanut flavor that you can feel good about eating!
1(12-ounce) bag of vegan semi-sweet chocolate chips
1(12.3-ounce) block of silken tofudrained
⅓cupof peanut butter powder
Instructions
In a small, microwave-safe bowl, microwave the vegan chocolate chips for 45 seconds. Mix with a fork until smooth. If the vegan chocolate is still lumpy, microwave for additional 20-second intervals, mixing in between, until the vegan chocolate is completely smooth. Alternatively, use a double boiler to melt the vegan chocolate.
In a blender or food processor, blend the melted vegan chocolate, tofu, and peanut butter powder until creamy.
Pour the peanut powder-chocolate mixture into popsicle molds and place in the freezer overnight (or for at least 8 hours).
Notes
Use silken tofu for the best texture. Firmer tofu varieties won't blend as smoothly and may result in a less creamy popsicle.
Blend the ingredients until the mixture is completely smooth and creamy. If the mixture is too thick or not blending well, add a small splash of plant-based milk to help achieve a smoother consistency.
To easily release the popsicles from the molds, briefly run the outside of the mold under warm water for a few seconds. This will loosen the popsicles without melting them.
