Ingredients

flax meal

plant-based milk

mashed ripe banana

vanilla extract

salted vegan butter
melted

all-purpose flour

baking powder

teaspoon
ground cinnamon
Instructions
In a large bowl, whisk together the flax meal and plant-based milk. Let it sit for 5 minutes to thicken.
Add the brown sugar, mashed banana, vanilla extract, and melted vegan butter to the bowl. Stir until well combined.
In a medium bowl, whisk together the flour, baking powder, cinnamon, and nutmeg (if using).
Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
Let the batter sit while the waffle iron preheats. Lightly oil the waffle iron.
Pour ⅓ to ½ cup of batter into the center of the waffle iron, close the lid, and cook until golden brown and crisp on the edges.
Carefully remove the waffle and place it on a cooling rack.
Repeat the process with the remaining batter, oiling the waffle iron as needed.
Notes
Use overripe bananas:
For maximum sweetness and flavor, use a banana with plenty of dark spots.
Don’t over-mix:
To avoid dense, rubbery waffles. A few tiny lumps are fine. Rest it for 20-30 minutes if needed.
Preheat the waffle iron
: To prevent sticking and ensure even cooking with crispy edges.
Don’t overfill the waffle iron
: Aim to cover ¾ of the surface. It will spread when closed.
