When I was a kid, during the holiday season it was always a tradition for my family to head to the store and pick up some peppermint holiday bark. I can remember countless December nights spent playing board games around the warm fire, munching on holiday bark.

In fact, an easy way to spice up this recipe would be to add a drop of peppermint extract and top with crushed peppermint candy to create a truly authentic holiday flavored bark. (brb may need to make a new batch to test this out..)

We know that involving the kids in every meal you cook can be a messy and a somewhat stressful affair, but this recipe is so simple and straightforward, it is the perfect one to go all in. Coating the chickpeas with the olive oil, melting the chocolate chips (with the help of an adult!), and spreading the mix in the baking pan are all great tasks for the little ones to take on. This Chocolate Chickpea Bark will taste even better if they feel they were a part of the process (this is a master Mom tip for every recipe you cook!)

Chocolate Covered Chickpeas

Sweet & salty 4-ingredient chocolate chickpea bark or clusters is an addictively crunchy, dairy-free, high-protein, high-fiber, gluten-free snack!

Ingredients 

  • 1 can (15-ounce) can of garbanzo beans, rinsed and drained (use reduced-sodium if possible)
  • 1 teaspoon of olive oil , or another neutral oil – coconut oil, etc.
  • dash flaky salt or sea salt
  • 1 cup of vegan chocolate chips semi-sweet or bitter-sweet

Instructions 

  • First, preheat the oven to 400F/200C and spread the chickpeas across a flat surface, patting them completely dry with a towel/paper towel.
  • Then, toss the chickpeas with the oil, spread them evenly on a large baking sheet, and sprinkle with salt.
  • Bake the chickpeas for 30-35 minutes or until golden brown and crispy but not burned. Shake the pan every 10 minutes to ensure even roasting.
    Alternatively, air fry the chickpeas.
  • Once roasted, set the crispy chickpeas aside to cool. When almost ready, melt the chocolate using a double boiler or in a microwave-safe bowl (in 30-second increments, stirring between) until smooth.
  • Toss the chickpeas into the melted chocolate, then spread evenly over a parchment-lined 8-inch square pan and transfer to the refrigerator for an hour to set (or 20-30 minutes in the freezer).
    Alternatively, spoon it into small chocolate chickpea clusters or even make individual chocolate covered chickpeas.
  • Once set, break or chop the chocolate chickpea bark into small pieces. Enjoy!

  • Use good quality chocolate: It’s the dominant flavor, so choose well.
  • Use cooked chickpeas: I use canned. You can cook them yourself, if preferred, but don’t attempt it with raw or soaked chickpeas.
  • For the crispiest chickpeas: Make sure to pat them thoroughly dry. Moisture can lead to steaming rather than becoming crispy. Also, monitor them – if they brown too quickly while remaining soft, drop the temperature by 10-15 degrees and continue to roast.
  • To save time: Use packaged, roasted chickpeas (plain or lightly salted).
