Apple Cake

This is a comforting, spicy cake that’s perfect for the cool weather.

 

Ingredients

  • 3/4 C. sugar
  • 1/3 C. canola oil
  • 1/4 C. applesauce
  • 3 T. almond or other non-dairy milk
  • 2 t. vanilla
  • 1 T. flax meal, plus 3 T. warm water
  • 1 C. all-purpose flour
  • 1 T. cinnamon
  • 1 t. baking powder
  • 1/2 t. nutmeg
  • 1/2 t. salt
  • 2 apples, peeled and diced
  • powdered sugar for dusting (optional)

 

Method

Step 1

Preheat oven to 325F. Lightly brush 8" pan with oil.

Step 2

In medium bowl, combine sugar, oil, applesauce, almond milk, vanilla, flax meal and water. Whisk briskly until all ingredients are fully incorporated and mixture is consistent.

Step 3

Add flour, cinnamon, baking powder, nutmeg and salt. Stir until just combined. Fold in chopped apples.

Step 4

Spread mixture into baking pan and bake for 30-40 minutes, or until cake is pulling away from sides and a tester comes out clean.

Step 5

Serve with powdered sugar, warm or cool.
