What You’ll Need

Wet Ingredients:

  • Canola oil – Use any neutral oil that you have. It will give the cake a better texture and will keep it moist for days!
  • Applesauce – replaces butter to make this cake dairy-free.
  • Plant-based milk – If you are buying one, choose soy, oat, and almond because they are the best dairy-free milk for baking. However, you can use whatever milk you have on hand.
  • Vanilla – will give the cake a lovely floral tone and aroma.
  • Flax meal – mix it in 3 tablespoons of warm water to make a thick and gelatinous mixture that will help bind all the ingredients together.

Dry Ingredients:

  • Sugar – You can use white granulated sugar or brown sugar for this recipe. Aside from its sweetness, sugar also helps in making the cake moist and soft.
  • All-purpose flour – great for making tender yet sturdy cakes. You can use a gluten-free flour brand 1:1.
  • Cinnamon and nutmeg – these warm and earthy spices will give the batter that unmistakable autumn pizzazz!
  • Baking powder
  • Salt – Enhances the sweetness of the apples and the flavors of the spices without leaving a salty trace.
  • Apples – though you can use any type of apple for this recipe, some types bake better than others. Honey Crisp, Cortland, Jonathan, Fuji, Gala, Granny Smith, Haralson, and Newtown Pippin are some of the best apples to consider if you plan to buy them for this recipe.
  • Powdered sugar – this is optional. Dust on top of the cake before serving.

Tips when making Vegan Apple Cake

  1. The key to a perfectly baked cake is to measure your ingredients correctly. When measuring in cups, do not use them to scoop the dry ingredients directly. Instead, use a spoon to transfer the dry goods into the measuring cups. Then run the spoon’s handle on top to level it out.
  2. Do not overmix your batter, or you will end up with a tough and dense cake. Don’t worry if you see a few lumps.
  3. Check for doneness by inserting a toothpick or skewer at the center of the cake. If it comes out clean, your cake is done. Take note that your baking time depends on the size of the pan and the type of oven used.
  4. You can also make this using a loaf, square, or Bundt pan. You can also make individual-sized muffins with this recipe by using a muffin pan. Make sure to grease them properly before pouring the batter.
  5. Always let the cake rest on the pan for at least 10 minutes before transferring to a cooling rack. If you try to remove the cake early, it might fall apart.

Add-on ideas!

Aside from dusting with powdered sugar, you can add more goodies and garnishes to keep your vegan apple cake fun and festive!

  • Add some nuts and dried berries to give the cake more texture and flavor! Pecans, almonds, walnuts, raisins, or dried cranberries are great options.
  • Serve with whipped cream, vegan yogurt or vegan ice cream on top!
  • Drizzle it with vanilla sugar glaze and top with some Peanut Butter Spiders to make a great Halloween special cake!
