Chocolate Chip Banana Bites are the perfect energy-boosting snacks to keep you going all day long. This recipe is light and nutritious, thanks to wholesome ingredients like sweet ripe bananas, chewy rolled oats, and chocolate chips. It's naturally vegan, flourless, and will just take 10 minutes to make with just a few ingredients.  These are great for morning or afternoon snacking or as a healthy addition to your kid's lunches.

You will love these little munchies, not just because they are super delicious. We have jotted down all the reasons why:

  • No-bake. This raw vegan recipe still gives you that same satisfying crunch of baked cookies in every bite.  All you have to do is blend everything, roll them into balls, chill to set, and they are ready to go! Easy peasy.
  • Budget-friendly. This recipe uses simple, economical ingredients. You'll almost certainly find most of these ingredients if you look around your pantry.
  • Healthy. These treats are as healthy as cookies can be!  Loaded with digestion-enhancing fiber and potassium from the bananas, and essential vitamins, minerals, and antioxidants from rolled oats and flaxseeds. It is definitely a healthier snack alternative to satisfy your sweet cravings.
  • Make-ahead. Double the recipe, and you can have some to enjoy now and the rest for later. They can be chilled for several days, ready to be munched on anytime!

Ingredients Used

  • Rolled oats – We used them in 2 ways – grounded and whole to add texture to these treats.
  • Cinnamon - Adds mild citrusy and spicy notes to the cookies.
  • Flaxseed – Provides a slightly nutty taste and adds more texture.
  • Vanilla extract – This aromatic flavoring blends so well with bananas.
  • Liquid sweetener - We used agave and maple syrup mixture. Aside from sweetening the cookies, they will help bind all the ingredients together.
  • Coconut oil - To make this recipe even healthier, we replaced vegan butter with melted coconut oil. It will keep the cookies moist even after chilling.
  • Banana – We used ripe bananas for this recipe. Spotty, mildly overripe bananas are also welcome! Aside from the flavor, they also add moisture to the treats.
  • Vegan chocolate chips - You can use any type you like, but dark or semi-sweet is recommended to keep the cookies from being too sweet. You can also use cacao nibs to make it raw.
  • Salt – A pinch will help accentuate the vanilla, banana, and chocolate flavors.

How to Make Chocolate Chip Banana Bites

1) Grind the oats. Using a blender or food processor, pulse ¾ cup of rolled oats until coarsely ground.

2) Blend together. Add all ingredients except the vegan chocolate chips and pulse them again until well blended. Fold in the vegan chocolate chips and ¼ cup of whole rolled oats.

3) Shape and Chill. Using a spoon or a scooper, form into balls and let them set in the fridge.

Add-ons and Substitutions

Customize them in any way you like! Here are some suggestions to amp the flavor of your Chocolate Chip Banana Bites!

  • Spices. Aside from cinnamon, you can also add nutmeg,  ginger, or cloves.
  • Nuts. Add walnuts, almonds, and cashews if you're looking for that extra crunch.
  • Dried fruits. Raisins or cranberries will provide some tartness and chewiness to the cookies.
  • Peanut Butter. Add a dollop of this for more flavor! Who does not love bananas and peanut butter together?
  • More vegan chocolates. If you can't get enough of chocolate, use chunks instead of chips. Or you can also drizzle the cookies with a vegan chocolate glaze before chilling them.

Tips to Perfect Chocolate Chip Banana Bites

  1. Take a bite of the ripe banana to see how sweet they are. This will allow you to modify the amount of sweeteners and chocolates to add. We don't want them to be overly sweet, right?
  2. If you like chunkier, more oat-textured cookies, you can ground just half a cup and leave the rest whole.
  3. If your dough is too dry, you can add more coconut oil or sweetener. The balls should be moist and compact before chilling, or they will fall apart.
  4. In case it becomes too wet, just add more ground oats until you get to the right consistency.

Storing Notes

These Chocolate Chip Banana Bites can be stored in a sealed jar or container in the fridge for up to 5 to 7 days. For longer shelf life, freeze them in a tightly sealed freezer bag for up to 2 months. It will be easier if you shape them into balls before freezing them. Just place a piece of wax or parchment paper in between so they do not meld together. You can thaw them in the fridge overnight before serving.

  1. Are raw cookies safe to eat? Since this is a vegan recipe, it is absolutely safe for consumption.
  2. How ripe should bananas go for this recipe? Though spotty, mildly overripe bananas are okay to use, we don't want an overly ripe banana as this may release too much moisture and make the Chocolate Chip Banana Bites soggy.
  3. What if my bananas are still not quite ripe? Can I use them? If you don't have ripe bananas on hand, you can speed up this process by placing the unpeeled bananas on a lined baking sheet.  Put them in the oven for about 15-20 minutes at 300 degrees F.

Ingredients
  

  • 1 cup of rolled oats divided
  • ¼ teaspoon of salt
  • ¼ teaspoon of cinnamon
  • 1 Tablespoon of ground flaxseed
  • 1 teaspoon of vanilla extract
  • 2 Tablespoons of liquid sweetener I use an agave/ maple syrup mixture
  • 2 Tablespoons of melted coconut oil
  • ½ ripe banana
  • ¼ cup of rolled oats left un-blended
  • ¼ cup of chocolate chips or cacao nibs to make it raw

Instructions
