  • Rolled oats – We used them in 2 ways – grounded and whole to add texture to these treats.
  • Cinnamon – Adds mild citrusy and spicy notes to the cookies.
  • Flaxseed – Provides a slightly nutty taste and adds more texture.
  • Vanilla extract – This aromatic flavoring blends so well with bananas.
  • Liquid sweetener – We used agave and maple syrup mixture. Aside from sweetening the cookies, they will help bind all the ingredients together.
  • Coconut oil – To make this recipe even healthier, we replaced vegan butter with melted coconut oil. It will keep the cookies moist even after chilling.
  • Banana – We used ripe bananas for this recipe. Spotty, mildly overripe bananas are also welcome! Aside from the flavor, they also add moisture to the treats.
  • Vegan chocolate chips – You can use any type you like, but dark or semi-sweet is recommended to keep the cookies from being too sweet. You can also use cacao nibs to make it raw.
  • Salt – A pinch will help accentuate the vanilla, banana, and chocolate flavors.

How to Make Chocolate Chip Banana Bites

1) Grind the oats. Using a blender or food processor, pulse ¾ cup of rolled oats until coarsely ground.

2) Blend together. Add all ingredients except the vegan chocolate chips and pulse them again until well blended. Fold in the vegan chocolate chips and ¼ cup of whole rolled oats.

3) Shape and Chill. Using a spoon or a scooper, form into balls and let them set in the fridge.

Storing Notes

These Chocolate Chip Banana Bites can be stored in a sealed jar or container in the fridge for up to 5 to 7 days. For longer shelf life, freeze them in a tightly sealed freezer bag for up to 2 months. It will be easier if you shape them into balls before freezing them. Just place a piece of wax or parchment paper in between so they do not meld together. You can thaw them in the fridge overnight before serving.

These are really easy to make and great for snacking or kid’s lunches. They're the perfect sweet treat to enjoy as a fun, healthy dessert!

Ingredients 

  • 1 cup of rolled oats divided
  • ¼ teaspoon of salt
  • ¼ teaspoon of cinnamon
  • 1 Tablespoon of ground flaxseed
  • 1 teaspoon of vanilla extract
  • 2 Tablespoons of liquid sweetener I use an agave/ maple syrup mixture
  • 2 Tablespoons of melted coconut oil
  • ½ ripe banana
  • ¼ cup of rolled oats left un-blended
  • ¼ cup of chocolate chips or cacao nibs to make it raw

Instructions
