You can always go for the usual crackers on a plate or a good old peanut butter sandwich when in need of a quick snack. But why settle for something ordinary when you can use those same snack items into something better, right? A layer of your favorite rich and creamy peanut butter in between crisp crackers fully coated with chocolate – who can say no to all this deliciousness? Your kids will love them! These sweet and nutty goodies are a great way to boost their energy and keep them active on a school day.  They also make awesome on-the-go snacks, late-night nibbles, or as a last-minute party dessert.

Ingredients Used

  • Vegan chocolate chips – I used semi-sweet chocolate for this recipe, but feel free to use any dairy-free chocolate you prefer. Dark chocolate is best if you do not want it too sweet. If you do not have vegan chocolate chips, you can use regular vegan chocolate blocks and just crush them into small chunks.
  • Peanut butter – You can use the brand that you love! However, make sure that you are using the smooth type and not the chunky one. Using chunky peanut butter might work, but it can result in uneven and messy sandwiches.
  • Snack crackers – we like to use Ritz or Late July for this recipe but use what you prefer. There are even some that already have peanut butter filling when you buy them. Using these can reduce your prep time further.

Optional

  • Crushed nuts – Though this is an add-on, we love how they add a crunchy element to these mini cracker sandwiches. Use any type of nuts that you like, like peanuts, almonds, walnut, or cashew. You can sprinkle them on after the melted chocolate is added. Or, you can mix them with the melted chocolate too.
  • Sprinkles – This is the fun step where your kids can help you decorate the P&B crackers sandwich. They will have so much fun making it and have a blast devouring them for sure!

How to make these Peanut Butter Cracker Sandwiches

  • Make the Mini Sandwiches. Spread the peanut butter thinly in between two crackers and set it aside. You should be able to come up with 12 sandwiches.

  • Melt the Vegan Chocolate Chips. If you’re new to melting chocolates, here are some simple instructions to follow. Melt the chocolate.  Prepare and line the baking tray with parchment paper.
  • Assemble. Dip each peanut butter sandwich into the chocolate and line them up on the baking sheet.

  • Let them Chill. Refrigerate for 30-45 minutes.

Amp your Sandwiches!

Here are some great ideas to take these simple sandwiches up a notch! They will come in handy especially when you are planning to make these easy treats for your next party.

  • Vegan White Chocolate – instead of using regular vegan chocolate, you can replace it with this or use both of them! You can also use it to decorate your Peanut Butter Cracker Sandwiches by drizzling it on top of the chocolate coating too.
  • Top it with Sea Salt Flakes. That extra saltiness will go really well with the sweetness of the vegan chocolate and the richness of the peanut butter.
  • Jelly.  For those who can’t enjoy peanut butter without jelly, it is easy enough to add a sweet jelly surprise in the middle of the sandwich.

  • Stir the peanut butter into the jar to distribute the oil evenly before spreading them into the crackers. Scooping the top most part without stirring it first will cause the sandwiches to be oily and the cracker soggy.
  • If you do not have a microwave or broiler to melt the dairy free chocolate, you can improvise by placing the chocolates in a small bowl and placing in on top of a bigger bowl filled with hot water. Stir until the vegan chocolate chips melt nicely and smoothly.

Storing Notes

Place them in the fridge for 20-30 minutes after adding the melted vegan chocolate to allow it to set. Once they harden, the Peanut Butter Cracker Sandwiches can be eaten right away or stored in the fridge in an airtight container for up to 3 months.  If you plan to freeze them, wrap them in foil or plastic and put them in a freezer-friendly container. Cut little squares of parchment or wax paper and place them in between the sandwiches.  This will eliminate sandwiches from sticking together.
