Chocolate Peanut Butter Patties

I have been trying to make nothing but healthy recipes in 2013, but everyone needs a break now and again, and this is a great way to do it.  They are quick, easy and you may already have everything in your house to make them.

I used some peanut butter that already have some sugar in it, but if you use natural peanut butter, you can opt to add in a small teaspoon of powdered sugar. And to add insult to unhealthy injury, I put some sprinkles on top of these pups.  I couldn’t help it.

To melt the chocolate, I improvised a double boiler by putting water in a pot and putting a smaller pot with the chocolate chips inside the bigger pot.  By bringing the water to a low rolling boil on medium-low heat, the chocolate chips melt nice and smoothly and maintain the consistency.  Don’t over heat or they will burn.  Or you could just use a microwave, but I don’t have one. Or use a double boiler.  But I don’t have one of those either.

These peanut butter patties are so delicious. I love being able to choose my chocolate variety.

  • 1 1/4 cups of non-dairy chocolate chips (I used Guittard Semi-Sweet chocolate chips)
  • 1/4-1/2 cup of Smooth Peanut Butter
  • 1 sleeve of Snack Crackers (like Ritz or Late July)
  • (optional) topping - sprinkles or crushed nuts
  • Wax or Parchment Paper


  • Create peanut butter sandwiches using the peanut butter and crackers. Keep the peanut butter on the thinner side.
  • Melt the chocolate chips and line a baking tray with wax or parchment paper
  • Put a small dab of melted chocolate onto the wax paper and put a sandwich on top of it, to coat the bottoms. Then use a spoon to scoop melted chocolate on top and spread it around, until the sandwich is coated.
  • After coating all the cookies, put the tray into the fridge for 30-45 minutes. Keep chilled until you serve.
