Creamy Mushroom Polenta

This is a really easy, flavor full side dish or even main dish if you use it as a bed for some veggies or marinaded tofu.

Creamy Mushroom Polenta

  • 1 cup polenta
  • 4-5 cups liquid (water or broth)
  • 1 Tablespoon oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 Tablespoon miso paste
  • 2 Tablespoon soy sauce
  • 1 Tablespoon agave or maple syrup
  • 8 oz mushrooms


  • Put polenta, liquid, oil, garlic powder, and salt in a pot and bring to a simmer
  • Slice and heat mushrooms in a little oil until they release some of their liquids
  • Mix miso, soy sauce, and agave together then add to pot along with the mushrooms
  • Cook until polenta is tender about 25 minutes
