Ingredients
- 10 ounces of frozen lima beans, thawed
- ¾ cup of vegetable broth
- ½ teaspoon of ground dried sage
- ½ teaspoon of dried rosemary leaves, crumbled
- ¼ teaspoon of salt
- ½ teaspoon of garlic powder (optional)
- ½ teaspoon smoked paprika (optional)
- pinch of pepper
- 6 Tablespoons of cornmeal divided
- 2 Tablespoons of neutral oil
Instructions
- Using a food processor, blender or immersion blender, add the lima beans and vegetable broth and pulse until roughly chopped. Don't overdo it, though. The beans should remain chunky.
- In a medium saucepan, heat the lima bean mixture, sage, rosemary, salt, and pepper until bubbling.
- Add in 4 tablespoons of cornmeal, stirring until the mixture becomes thick and bubbling. Remove from heat and allow to cool.
- Use a â…“ cup and scoop the mixture onto your hand.
