Easy Dinner - Brown Rice Veggie Stir Fry

  • 1 cup of brown rice
  • 2 cups of water
  • 1 teaspoon of Knorr® Selects Vegetable Granulated Bouillon
  • 1 Tablespoon of vegetable oil
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves of garlic, minced
  • 1 cup of frozen broccoli florets
  • 16 ounces of extra firm tofu, cut into ½-inch cubes


  • Mix together the rice, water and Knorr® Selects Vegetable Granulated Bouillon in a medium pot with a lid.
  • Over high heat, bring to a boil. Cover with lid and reduce the heat to low. Cook for 40 minutes. Remove from heat and set aside.
  • In a large pan over medium-high heat, heat oil. Add the onion, bell pepper, garlic, broccoli, and tofu, and sauté for 4 to 5 minutes, until veggies become tender.
  • Stir in the cooked rice and cook for 5 more minutes.


Use whatever type and flavor of bouillon or broth in place of the granules and water. I like to tie in the flavor of the broth with my seasoning.
