How to Make Lemon Lentil Soup

Step 1: First, sort through (to remove debris and any shriveled lentils) and rinse the lentils. Then, finely dice the onion, carrot, and celery. Also, mince the garlic. Meanwhile, heat the oil in a large saucepan over medium-high heat. Once hot, sautรฉ the onion, carrot, celery, and garlic until they begin to brown.

Step 2: Lower the heat to medium-low, add the cumin and Italian seasoning, and mix constantly for 10-15 seconds.

Step 3: Add the tomato paste and mix, then add the lentils, water, and bouillon (or stock). Bring the mixture to a boil, cover it with a lid, and let it simmer for 20-25 minutes or until the lentils are tender. Meanwhile, zest, then juice the lemon.

Step 4: Turn off the heat, add the lemon juice/zest, and season it with salt & pepper to taste. Finally, garnish the lentil lemon soup with lemon wedges and parsley, and enjoy!

Slow Cooker Lentil Soup with Lemon

Complete step 1 as written, then transfer the sauteed ingredients, tomato paste, and veg stock to a crock pot.

Can I use red lentils?

I prefer brown or green lentils, as they hold their shape, even once cooked. Red lentils, however, break down and become mushy. You can technically use them, but the texture differs, and I prefer them in blended soups.

Can I use canned lentils?

Yes โ€“ I donโ€™t find them as flavorful that way, but you could substitute canned lentils and simmer for just 10-15 minutes.

Can I blend the soup?

Absolutely! Though personally, I love the light lemony broth. Itโ€™s up to you.

Storage Instructions

  • 2 tablespoons of olive oil
  • 1 yellow onion diced
  • 1 large carrot diced
  • 2 celery ribs diced
  • 4 cloves garlic minced
  • 1 teaspoon of cumin
  • 1 teaspoon of Italian seasoning
  • 1 tablespoon of tomato paste
  • 1 ยฝ cups of green lentils rinsed
  • 6 to 7 cups of water
  • 3 low-sodium vegetable bouillon cubes
  • 2 lemons zest and juice (divided)
  • Salt and pepper to taste
  • Parsley chopped (optional)

Instructions 

  • In a large pot with a lid, heat the olive oil over medium-high heat. Add the onion, carrot, celery, and garlic. Sautee until they begin to brown.
