Apple Coconut Curry

There’s just something about curry that’s incredibly warming on even the coldest of nights. This recipe is nice and creamy due to the coconut milk, while being  hearty from the chopped apple and vegan sausage (which is completely optional). Though this recipe contains some healthy fats from the light coconut milk, it is actually oil-free and extra filling when served over rice or grains.

  • 1/2 large yellow onion, chopped
  • 1-2 cloves minced garlic
  • 1 small/med apple, diced
  • pinch ginger
  • dash of turmeric
  • 1 Tbs curry powder
  • 1 can light coconut milk
  • 1 Tbs coconut sugar, maple syrup, etc
  • 1 Tbs shredded coconut (optional)
  • 1-2 Tbs soy sauce
  • salt and pepper, to taste
  • vegan sausage of choice (optional)
  • basmati rice and parsley flakes for serving


  • Begin by sautéing the onion and garlic in a medium-large pot on medium heat. Add water if the ingredients start to stick.
  • Once the onions have become translucent, add the diced apple and continue heating until softened. Add in the spices and mix well. Start cooking the rice in a separate pot if you are planning on serving this dish over rice.
  • Add in the light coconut milk, soy sauce, coconut sugar, shredded coconut and vegan sausage if using. Stir until a boil begins to form and reduce the heat to low. Cover and simmer for 15-20 minutes.
  • Add salt and pepper to taste, stir and serve the curry. It goes really well with basmati or brown rice, or you can have it with some bread or other grain. Top with optional dried parsley flakes and enjoy!
