Blueberry Overnight Oats

Double or triple this recipe and have breakfast for the week! So easy to eat on the go in a jar or in a mug. It straight up tastes like dessert.

Ingredients

  • 1 heaping cup rolled oats
  • 1/2 heaping cup fresh blueberries (frozen would probably work too)
  • 2 pinches salt
  • 1/2 teaspoon vanilla extract
  • 1 Tablespoon shredded coconut
  • 2 Tablespoon maple syrup (or any sweetener)
  • 1 cups mixture of coconut water and almond milk with slightly more coconut water than milk
  • 1/2 cup fresh blueberries (ya another one)

Method

Step 1

Blend everything together except the oats and last 1/2 cup of blueberries, then mix in oats and second 1/2 cup of fresh blueberries

Step 2

Put in a jar in the fridge and it will be ready in the morning (or 6ish hours later) I LOVE mine cold but you can heat it up if you like. You might need to add more liquid. Play around with proportion of liquid to suit your taste.
