Blueberry Overnight Oats

Double or triple this recipe and have breakfast for the week! So easy to eat on the go in a jar or in a mug. It straight up tastes like dessert.

Blueberry Overnight Oats

These overnight oats taste like a delicious dessert! You'll want to double or triple this to satisfy the week of meals.

Ingredients
  

  • 1 cup of rolled oats
  • 1/2 cup of fresh blueberries (frozen would probably work too)
  • 2 pinches of salt
  • 1/2 teaspoon of vanilla extract
  • 1 Tablespoon of shredded coconut
  • 2 Tablespoons of maple syrup (or any sweetener)
  • 1 cup of coconut water and almond milk with slightly more coconut water than milk
  • 1/2 cup of fresh blueberries (ya another one)

Instructions
 

  • Blend everything together except the oats and last 1/2 cup of blueberries, then mix in oats and second 1/2 cup of fresh blueberries
  • Put in a jar in the fridge and it will be ready in the morning (or 6ish hours later) I LOVE mine cold but you can heat it up if you like. You might need to add more liquid. Play around with proportion of liquid to suit your taste.
