These burritos are my go to  breakfast almost every Saturday.  They are really tasty, and I hope you enjoy them as much as me!

Ingredients
  

  • 1 block of Extra Firm Tofu, water pressed out
  • 1 cup of Chopped Kale
  • ½ cup of Diced Onion
  • 2 Tablespoons of Nutritional Yeast
  • 1 Tablespoon of Chili Powder
  • 1 teaspoon of Garlic Powder
  • ½ teaspoon of Tumeric
  • 4 Burrito Size Tortillas
  • Salsa
  • Avocado (optional)

Instructions
 

  • Place tofu in a large bowl and crumble with a fork.
  • Add nutritional yeast, chili powder, garlic powder, and turmeric to bowl with tofu and mix in.
  • In a non stick pan or pan coated with cooking spray, heat onion for 3 minutes.
  • Add tofu to pan.
  • Cook tofu for 5 minutes.
  • Add chopped kale to pan and continue to cook for 5 more minutes.
  • Place tofu mix into burritos. Top with salsa and avocado.
  • Roll them up, and enjoy!

Try freezing these for a quick meal.
