Lima beans are one of the most nutritious legumes there. They are packed with protein, fiber, nutrients, and vitamins! They help aid in stabilizing blood sugar levels and support heart health too!
I, too, was skeptical – sausage? Made from lima beans? But honestly, we urge you to give it a try! You won't even taste the lima beans - just pure plant-based sausage goodness! It is a great way to make your family eat healthier and make your breakfast stress-free too.
1) Put the lima beans and vegetable broth in an immersion blender and pulse until roughly chopped.
2) Transfer the lima bean mixture to a medium pan. Then, add sage, rosemary, salt, and pepper. Let it simmer.
3) Once the mixture is bubbling, add the cornmeal, and stir continuously until the mixture thickens. Set aside and let it cool.
4) Using ⅓ cup, scoop the mixture into your hands and form small balls. Flatten them into patties, then coat them with the remaining cornmeal.
5) Fry the patties for about 5 minutes on each side or until golden brown using medium heat. Serve while still warm.
The lima bean mixture can be stored in plastic wrap or formed into patties with parchment paper between them. Store them in the fridge if you plan to cook them that day or the next day, otherwise freeze them for longer shelf life.
Store leftover cooked Lima Bean Vegan Sausages in an airtight container in the fridge for 3 to 4 days. Warm the vegan sausages in the microwave on mid-power for a few minutes.

Thank you for always posting the nutritional info as I need to keep a close watch. Can I bake these? If yes, what temperature and how long? Thanks!
Andrea White says
You can, although we haven't tried that out yet. You may have to experiment with the time and temperature for them to come out just as crispy!
