Yellow Dal

I love making food in bulk and this is a great example of a bulk food that taste even better the second day. Indian food is so flavorful and so easy to make. Make sure to toast your spices first and you can’t go wrong with this yellow dal. Make some rice and you’re good to go for the week.

  • 1 medium yellow onion, diced
  • 3 Tablespoons coconut oil (or extra virgin olive oil)
  • 9 garlic cloves, minced
  • 1 Tablespoon fresh ginger, grated
  • 1/2 Tablespoon coriander
  • 1/2 Tablespoon cumin
  • 2 teaspoons tumeric
  • 1 1/2 cup yellow lentils
  • 4 cups veggie broth

Step 1

Cook the onions in the oil until translucent. Then add garlic, ginger, and spices and cool for 30 seconds, making sure nothing burns

Step 2

Add lentils and broth and cook covered until lentils are soft, about 30 minutes. Stir occasionally.

Step 3

Serve over rice.

I also added 1tsp of Garam Masala. And a little bit of cinnamon and nutmeg (a substitute for cardamom) This makes it a little bit more traditional to the Nepalese Dal Bhat. Super yummy!
