Yellow Dal

I love making food in bulk and this is a great example of a bulk food that taste even better the second day. Indian food is so flavorful and so easy to make. Make sure to toast your spices first and you can’t go wrong with this yellow dal. Make some rice and you’re good to go for the week.

Ingredients
  

  • 1 medium yellow onion, diced
  • 3 Tablespoons of coconut oil (or extra virgin olive oil)
  • 9 garlic cloves, minced
  • 1 Tablespoon of fresh ginger, grated
  • 1/2 Tablespoon of coriander
  • 1/2 Tablespoon of cumin
  • 2 teaspoons of turmeric
  • 1 1/2 cups of yellow lentils
  • 4 cups of veggie broth

Instructions
 

  • Cook the onions in the oil until translucent. Then add garlic, ginger, and spices and cool for 30 seconds, making sure nothing burns
  • Add lentils and broth and cook covered until lentils are soft, about 30 minutes. Stir occasionally.
  • Serve over rice.
