BBQ Jackfruit Sandwich

I have posted something similar to this in the past. But I wanted to try the other method people use to cook the jackfruit. I think I may actually prefer this method. It is faster, and the jackfruit actually gets a more crispy texture. Use any type of BBQ sauce. The seasoning can make the jackfruit a bit spicy, so if heat is not your thing, use a sweeter BBQ sauce.

Ingredients
- 2 17oz Cans of Jackfruit in Water
- 2 Cloves of Garlic, minced
- 1/2 Cup of Diced Onion
- 1/2 Teaspoon of Smoked Paprika
- 1 Teaspoon of Cajun Seasoning
- 1/2 Teaspoon of Garlic Powder
- 1 Cup of BBQ Sauce
- 1/2 Teaspoon of Liquid Smoke (optional)
Method
Step 1
Preheat oven to 400f.
Step 2
Rinse jackfruit under cold water. Remove bottom triangle section of the jackfruit.
Step 3
Mix paprika, cajun and garlic powder together.
Step 4
Toss jackfruit pieces, garlic, and onion in seasoning mixture until coated.
Step 5
Add jackfruit, onion, and garlic to a non stick pan and cook on medium for 10 minutes.
Step 6
Add BBQ sauce. Continue to cook for 15 minutes.
Step 7
Remove jackfruit mixture form pan and add to a non stick baking sheet.
Step 8
Place in oven for 10 minutes.
Step 9
Remove from oven and serve on bread.
Step 10
Top the sandwich with a sweet coleslaw, bell peppers, or even crispy fried onions!
