And the best part, they’re so easy to make! All you have to do is blend the ingredients, roll them into balls, chill to set, and they are ready to go! This recipe uses simple, economical ingredients you can keep in your pantry. Plus, you can double the recipe, to enjoy some now and save the rest for later. They can be chilled for several days (or frozen for longer!), ready whenever the sweet tooth hits or you need a boost of energy!
Ingredients for Chocolate Chip Energy Bites
- Rolled Oats: I use them in 2 ways: grounded and whole to add texture to these treats.
- Cinnamon: Adds mild warming and spicy notes to the cookies.
- Flaxseed: Provides a slightly nutty taste and adds more texture.
- Vanilla extract: This aromatic flavoring blends so well with bananas.
- Liquid Sweetener: I used agave and maple syrup mixture. Aside from sweetening the cookies, they will help bind all the ingredients together.
- Coconut Oil: To make this recipe even healthier, I replaced vegan butter with melted coconut oil. It will keep the cookies moist even after chilling.
- Banana: I used ripe bananas for this recipe. Spotty, mildly overripe bananas are also welcome! Aside from the flavor, they also add moisture to the treats.
- Vegan Chocolate Chips: You can use any type you like. Dark or semi-sweet is recommended to keep the cookies from being too sweet. You can also use cacao nibs to make it raw.
- Salt: A pinch will help accentuate the vanilla, banana, and chocolate flavors.

How to Make Chocolate Chip Banana Bites

Step 1: First, grind the oats. sing a blender or food processor, pulse ¾ cup of rolled oats until coarsely ground.

Step 2: Then, add all ingredients except the vegan chocolate chips to the blender. Pulse them until well blended.

Step 3: Next, fold in the vegan chocolate chips and ¼ cup of whole rolled oats.

Step 4: Finally, using a spoon or a scooper, form into balls and let them set in the fridge to chill.

- If too dry: If your dough is too dry, you can add more coconut oil or sweetener. The balls should be moist and compact before chilling, or they will fall apart.
- If too moist: In case it becomes too wet, just add more ground oats until you get to the right consistency.

Since this is a vegan and flourless recipe, it is absolutely safe for consumption.
Though spotty, mildly overripe bananas are okay to use, we don’t want an overly ripe banana. This may release too much moisture and make the Chocolate Chip Banana Bites soggy.
If you don’t have ripe bananas on hand, you can speed up this process by placing the unpeeled bananas on a lined baking sheet. Put them in the oven for about 15-20 minutes at 300 degrees F.
They can be! Make sure you use oats that are labeled certified gluten-free, if needed.
