How to Make Sweet Potato Bread

Step 1: Preheat the oven to 400F/200C and grease a 9×5-inch (25×11 cm) loaf pan. Then, use the largest side of a box grater (or a food processor shredding disk), to grate 1 ยฝ cups of sweet potato.

Step 2: In a large bowl, combine the flour, baking powder, salt, and spices.

Step 3: Add the sweet potato to a medium bowl with the remaining wet ingredients (plant-based milk, vanilla, sugar, and oil). Mix well. Then, combine the wet and dry ingredients, mixing until just combined โ€“ but be careful not to over-mix. A few tiny lumps are fine.

Step 4: Pour the batter into the prepared loaf pan and bake it for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean (a few moist crumbs are fine, but no wet batter).

  • 1 cups of all-purpose flour
  • 1 tablespoon of baking powder
  • ยฝ teaspoon of salt
  • 1 teaspoon of cinnamon
  • ยผ teaspoon of nutmeg (optional)
  • ยผ teaspoon of ginger powder (optional)
  • 1 ยฝ cups of grated raw sweet potato
  • 1 cup of plant-based milk
  • 1 ยฝ teaspoon of vanilla extract
  • ยฝ cup of brown sugar
  • โ…“ cup of neutral oil

Instructions 

  • Preheat the oven to 400 degrees F, and line it with parchment paper to make it easier to lift it out of the pan.
  • Mix the flour, baking powder, salt, and cinnamon (and nutmeg and ginger powder if using) in a mixing bowl. Set aside.

      I made this following the instructions with no substitutions. I did double the recipe, and 2/3 cup of oil was a disaster. It was dripping with oil, no matter how long I baked it. I had to toss it out. My gut told me 2/3 cup of oil was crazy!
