It’s getting chilly outside, and this is the most perfect soup to get warm and cozy – especially for National Comfort Food Day! Since I’m big into batch cooking, I double the recipe and eat it throughout the week. Split peas are a great source of protein, the recipe is only about $1.50 per serving, it’s loaded with veggies (and you can always add whichever veggies you have on hand), and the Knorr® Selects Vegetable Granulated Bouillon makes it burst with flavor. - 1 tablespoon of vegetable oil
- 1 medium yellow onion, diced
- 2 cloves of garlic, minced
- 1 large carrot, diced
- 2 ribs of celery, sliced
- 2 cups of split peas
- 6 cups of water
- 3 tablespoons Knorr® Selects Vegetable Granulated Bouillon
- Salt and pepper, to taste
Heat oil in a large pot (with a lid) over medium heat.
Add onion, garlic, carrots, and celery, and sauté for 5 to 7 minutes.
Add split peas, water, and Knorr® Selects Vegetable Granulated Bouillon, cover with the lid, lower the heat to a simmer, and cook for 45 minutes. Uncover and cook for 15 minutes.
Serve garnished with salt and pepper.
