This is granola the way I like it. Sweet, but not cloyingly so. It’s hearty enough to keep you feeling full for awhile, and the flax meal and walnuts provide a healthy dose of omega-3s. Try it with almond milk and raisins!
I use natural, unsweetened peanut butter, but use whatever you have on hand. If you only have quick-cooking oats in your pantry, those will be fine.
- 6 C. old-fashioned oats
- 1 1/2 C. walnuts, finely chopped
- 1/2 C. flax meal (ground flax seeds)
- 1 T. cinnamon
- 1 t. sea salt
- 1 C. peanut butter
- 3/4 C. brown sugar
- 1/2 C. applesauce
- 1/3 C. canola oil
- 1 T. vanilla extract
Preheat oven to 250F. Line 2 baking sheets with parchment/silpat sheets.
In large bowl, combine oats, walnuts, flax meal and cinnamon. Mix well.
In medium saucepan, combine peanut butter, brown sugar, applesauce, and oil. Heat over medium and stir, just until ingredients are well-combined. Remove from heat, add vanilla and stir again.
Pour peanut butter mixture over oat mixture and mix well.
Divide granola between baking sheets, spreading evenly. Bake for one hour, stirring every 15 minutes, until granola is golden and feels dry.
Allow to cool completely and store in an air-tight container.
