Five Minute, Clean Green Avocado Cream

This luscious avocado cream is similar to mayo, but so much better. Unlike mayo there are NO added oils, eggs, cholesterol, or additives. Just pure ripe avocados, a little bit of water, and some simple ingredients. Put it on sandwiches, veggie burgers, salads, even spread it on your toast. It’s topping a stack of our amaranth patties in the photo above, and they do make a nice pair! Keeps for a few days in the fridge.


  • 2 ripe avocados
  • 1 tsp apple cider vinegar (or white vinegar)
  • 2 Tbsp water
  • 1 Tbsp lemon juice
  • 2 Tbsp fresh parsley
  • 1.5 tsp salt


Step 1

Combine all ingredients in a food processor and blend on high for 30 seconds, scraping down the sides as needed until a thick cream is formed. Will be similar to mayo in consistency but tastes a lot better, and is incredibly nutritious. Put it on sandwiches, use as salad dressing, dip french fries in it, eat it with a spoon!
