Who said pizza can only be savory? Sure, I enjoy a Vegan BBQ Pizza or a Vegan Thai Pizza Recipe when I am in the mood for something filling for lunch or dinner. But when I am craving for something fruity and fun, I use my frozen pizza crust to make this delectable recipe. It is so refreshing, pretty to look at, and filled with summery goodness!

The Best Vegan and Gluten-Free Fruit Pizza

The summer heat can zap one’s energy, and when this happens to me, I turn to quick and easy recipes that do not require much work. And this vegan fruit pizza does not only fit the bill; it also instantly refreshes and rejuvenates! I used Oggi Foods’ Cauliflower Crust to make it, and it bakes in 5 to 7 minutes only! After that, I simply slap on some nut or seed butter and top it with my favorite summertime fruits! Quick, easy, and so versatile!

  • Oggi’s Cauliflower Pizza Crust - Check out a retail grocer near you. Visit their store locator here. Look for this gluten-free crust in the frozen section.
  • Nut butter - You can use whatever nut butter you have on hand. If you are allergic to nuts, you can seed butter instead.
  • Fruits and berries - In this recipe, I used banana slices, sliced strawberries, blueberries, and raspberries. Love the combination of creamy sweetness and juicy tartness in every slice! However, you are welcome to use any fruits you like!
  • Vegan melted chocolate - This is optional. However, a bit of dairy-free chocolate never hurts!  

Ingredient Substitutions, Add-ons, and Variations

  • If you want to make your fruit pizza lighter, you can always use vegan whipped cream or vegan yogurt instead of nut butter.
  • Here are some great fruit options to try: mango, peaches, kiwi, grapes, strawberries, papaya, pomegranate seeds, cherries, oranges, and melons.
  • You can also drizzle it with caramel syrup or maple syrup.
  • Garnish your fruit pizza with your fave nuts, coconut flakes, and mint leaves.

How to Make Summer Fruit Pizza

It is super easy; you can get your kids involved in making this! Turn it into a fun family time and get rewarded with a lovely treat for all your effort!

  • 1) Cook the pizza crust according to package instructions. Once done, place it in a cooling rack and allow it to cool completely.
  • 2) Spread the nut or seed butter evenly onto the Oggi’s Cauliflower Pizza Crust.

Useful Tips!

  • Slice the bananas right before you add them so they will still look fresh when you serve the fruit pizza. Or you can brush them with citrus juice to prevent them from browning sooner.
  • Follow the package instructions when baking the crust in the oven. Do not overbake, or your crust will turn hard.
  • Make sure the crust is completely cool before adding the nut butter. The butter might melt and seep into the crust if it is hot or warm.
  • Make sure to drain the veggies well before you arrange them on top to prevent the crust from getting soggy. If you are using fruits that are very juicy, you might want to drain them for a bit before adding them.

How to Store Summer Fruit Pizza?

It is better to serve it right away. And honestly, the slices are grabbed so quickly that they are gone before you know it! If you have to store them, though, wrap them in a plastic wrapper, and store them in the fridge for up to 3 days. You can always bake the crust ahead of time and keep it in the refrigerator for a few days. You can then reheat quickly and assemble right before serving.

What to Serve it with?

If you plan to enjoy this for breakfast, a glass of Cashew Milk or Banana Breakfast Shake would be perfect! You can also pair it with Vegan Mexican Hot Chocolate or Mexican Horchata to unwind in the afternoon or evening.

  • ¾ to 1 cup nut butter or seed butter
  • 2 pieces bananas sliced
  • ½ cup strawberries sliced
  • ½ cup blueberries
  • ½ cup raspberries
