Brussel sprouts have a really bad reputation, but that’s just because people used to think that the only way to eat them was boiled. There is nothing attractive about soggy, brownish looking veggies, right? Well, I have great news! Roasting is the way to go, like these roasted Brussel’s sprouts with cranberries recipe! This cooking method gives them a much brighter color and makes them taste divine!

Roasted Brussel Sprouts: The Perfect Fall/Winter Side!

This recipe is such a great idea for a side dish! Eat them with some vegan pot pies or baked tofu, so delicious! It’s especially great as a Thanksgiving or Christmas dinner recipe since it’s main ingredients are so very seasonal. Would go perfect with lentil roast or vegan burgers, plus a gravy! Yum!

Roasted Brussel Sprouts with Cranberries

Ingredients
  

  • 3 cups of brussel sprouts
  • 2 tablespoons of olive oil
  • salt to taste
  • black pepper to taste
  • 1/2 cup of dried cranberries

Instructions
 

  • Heat up the oven at 375 F.
  • Cut the brussels sprouts in halves and season them with the olive oil, salt, and pepper.
  • Place them on a baking tray and mix in the cranberries.
  • Cook them at 375 F for about 30 minutes. Serve and enjoy!
