This crunchy salad with peanut dressing is so full of flavor, texture, and colors, you’ll be counting down the minutes until you can devour it.
Bring on the Crunch
One of the best elements of this crunchy salad with peanut dressing is its crunch. Having texture in a salad is so important! We are happy to report that thanks to the fresh cabbage and the peanuts, this salad has a lot of it. The peanuts are optional but we recommend adding them (or another crunchy ingredient like sesame seeds or chopped almonds if you are allergic to peanuts) to experience this salad fully.
The Dressing is Key
Since we already settled that crunch is crucial when it comes to a good salad, it makes sense to move on to the next (and equally important) key element to make a salad unforgettable, the dressing. There’s nothing wrong with the classic vinaigrette but if you want to keep yourself interested in salads altogether, you need to have different dressing options.
This super -creamy peanut dressing should definitely be in your rotation because it is so easy to make and so delicious! The combination of peanut butter and soy sauce is fail proof and makes anything a hundred times more tasty. So feel free to use this peanut dressing on any preparation, like buddha bowls, a kale salad, or over some baked tofu.
Add Some Protein
This crunchy salad with peanut dressing is filling and a perfect lunch on its own but if you’re looking to add more protein to the mix, you are more than welcome to throw in some tofu cubes or some roasted chickpeas. The peanuts and peanut butter add a great amount of protein already but there’s always room for more!

- 1/4 cup of creamy peanut butter
- ¼ cup of water
- 2 garlic cloves, minced
- 1 teaspoon of minced ginger
- 2 teaspoons of soy sauce
- 2 ½ teaspoons of apple cider vinegar
- 1 teaspoon of agave or brown sugar or maple syrup
- 2 cups of shredded romaine lettuce
- 2 cups of shredded purple cabbage
- 2 carrots, grated
- ½ cup of chopped cilantro
- Chopped peanuts, optional for garnish
- Plant-based protein of your choice (we used edamame in the photo), optional
In a standard bowl, whisk together the peanut butter, water, garlic, ginger, soy sauce, vinegar, and sweetener, until thoroughly combined.
In a large bowl, add the romaine, cabbage, carrots, and cilantro.
Pour in the dressing and toss together. Sprinkle on the peanuts and plant-based protein, if using.
