Ingredients
  

  • 3 cups of pumpkin
  • 2 cups of coconut milk
  • black pepper to taste
  • salt to taste
  • chili flakes
  • balsamic reduction to top with

Instructions
 

  • Cut the pumpkin in any pieces good enough to be blended later. Season the pumpkin with some salt and pepper.
  • Roast the pumpkin in a baking tray. This should take about 20 minutes.
  • Once the pumpkin is tender, place it in the blender with the rest of the ingredients.
  • Blend until smooth. If the soup is not warm enough you can transfer to a pot and heat it up for a few minutes.
  • Serve with some chili flakes on top. You can also drizzle it with some balsamic reduction.
