In need of a dip? Have an abundance of spinach? Let me help you whip something up that’s great as a chip or veggie dip or as a spread for sandwiches. No mayo here! Just a few ingredients until you’re the hit of the party!
- 1 bag of spinach 6oz
- 2-3 Tablespoons of oil
- 3/4 a yellow onion, diced
- 3 large garlic cloves, minced
- 3/4 cup raw cashews soaked for 2 hours
- 3/4 block of soft tofu about 3.5 oz
- 1/2 teaspoon salt
Wilt spinach in a pot on the stove then set aside.
Heat oil and add diced onions, cool until translucent. Then add minced garlic and cook another 30 seconds or so.
Add ALL ingredients into a blender (I used a large jar and an immersion blender) and blend until smooth!
Grab some chips and CHOW DOWN!
