Rich and Creamy Biscoff Latte Recipe

Whether you’re looking for your next obsession after what we’re dubbing the ‘Dalgona phase’ or you’re just someone who loves a good caffeine fix and is as obsessed with Biscoff as us – we think this Biscoff latte is the next big thing.

The warmly spiced, sweet, caramelized cookie flavor of Biscoff (aka speculoos cookie butter) pairs perfectly with the bitterness of coffee and creamy frothed plant-based milk to create an indulgent hot or iced Biscoff latte that you can enjoy year-round.

Best of all, it’s so easy to make, cheaper than buying one, and we’ve even made it 100% dairy-free (which is more than can be said for many coffee shops!). Once ready, enjoy this delicious vegan cookie butter latte alone or alongside Biscoff brownies, blondies, fudge, or even a slice of Biscoff cake.

The Ingredients

  • Coffee: We used a combination of instant coffee and hot water, but you can use any strongly brewed coffee or a shot of espresso (regular or decaf).
  • Biscoff: Use smooth Biscoff or similar vegan cookie butter and optionally a Biscoff cookie, crumbled, for garnish.
  • Plant-based milk: We use unsweetened dairy-free milk (i.e., soy milk, oat milk, etc.). Use a ‘Barista’ style plant milk for the most frothy Biscoff latte.

For an even creamier latte, combine plant milk and vegan cream (or canned coconut milk). You could also use ‘Biscoff topping’ to drizzle over the Biscoff coffee.

What Else Could I Add?

  • Cinnamon: Increase the cinnamon flavor of the cookie butter spread with an extra sprinkle of cinnamon over the top.
  • Sea salt: Just a tiny pinch to add contrast and enhance the flavors.
  • Vanilla extract: For delicious warmth (use natural vanilla). Use vanilla syrup for added sweetness to the cookie butter latte recipe, too.
  • Caramel sauce: To drizzle over the top.
  • Whipped cream: Like coconut whipped cream or other dairy alternative.
  • Sweetener: If the Lotus Biscoff latte isn’t sweet enough, feel free to add some regular or brown sugar, coconut sugar, maple syrup, etc., to taste.

How to Make a Biscoff Latte

  • First, prepare the coffee/espresso using your preferred method. We boiled the water, allowed it to cool for a minute, then added it to a mug and stirred in the instant coffee granules until it dissolves.
  • Then, stir in the vegan cookie butter until completely melted.
  • Meanwhile, heat and foam the vegan milk using a frother or handheld blender.

Not all plant-based milk will froth as well as others. For super frothy results, use a barista-style milk (usually oat-based).

  • Pour the frothy vegan milk over the coffee and gently stir (don’t over-mix). Finally, optionally sprinkle the crumbled cookie on top, and enjoy!

Taste it, too. If it’s not sweet enough, feel free to add some granulated or liquid sweetener at this point.

For a Biscoff Iced Latte

  1. Prepare the coffee and stir the Biscoff into it until melted.
  2. Meanwhile, froth the cold vegan milk (with a frother or in a blender). Pour the plant milk over the coffee, add ice, and optionally top with vegan whipped cream and crumbled Biscoff cookies/ more cookie butter drizzle.

  • Use high-quality coffee: Or at least one you love the flavor of, to make the best Biscoff latte recipe.
  • For the frothiest latte: Use specially labeled ‘barista’ style plant milk, which includes added ingredients to help it froth.
  • Sweeten to taste: Biscoff already contains sugar, but if you prefer it sweeter, taste it and add more if preferred.  
  • Don’t like coffee? Add a spoonful of Biscoff to hot chocolate instead.

Ingredients 

  • 3 teaspoons of instant coffee
  • ¼ cup of hot water
  • ½ cup of vegan milk
  • 1 tablespoon of Biscoff cookie butter
  • 1 Biscoff cookie, crumbled for garnish (optional)

Instructions 

  • Boil the water, let it cool for one minute in a medium mug, mix the water and coffee. Add the cookie butter and mix until completely dissolved.
  • Heat and foam the plant milk using a frother.
  • Add the warm frothed plant milk to the mug with the coffee mixture and gently stir. Do not over mix.
  • Optionally, sprinkle the crumbled cookie on top and enjoy hot.
