Ingredients

  • 6 ounces of spinach
  • 2-3 Tablespoons of oil
  • ¾ of a yellow onion, diced
  • 3 large garlic cloves, minced
  • ¾ cup of raw cashews soaked for 2 hours
  • 4 ounces of soft tofu
  • ½ teaspoon of salt

Instructions

  • Wilt spinach in a pot on the stove then set aside.
  • Heat oil and add diced onions, cool until translucent. Then add minced garlic and cook another 30 seconds or so.
  • Add ALL ingredients into a blender (I used a large jar and an immersion blender) and blend until smooth!
  • Grab some chips and CHOW DOWN!

Notes

Soft tofu is necessary here to get the perfect dip texture.
