Even better, as velvety and delicious as this pumpkin and sage pasta is, itโs actually super healthy, fairly low-fat, and loaded with several vitamins and minerals (like vitamins A and C), antioxidants, fiber, and even plant-based protein (if you use silken tofu).

- 2) Add the onion and garlic to the pan and sautรฉ until they are lightly brown, then add the sage and sautรฉ for 20-30 seconds, stirring constantly.
- 3) Transfer the mixture to a blender along with the pumpkin puree and silken tofu and blend until completely smooth, then return it to the saucepan.
If youโre using coconut milk or another liquid-y โcream,โ thereโs no need to use a blender. Just whisk everything in the saucepan until smooth.

- 2 tablespoons of olive oil
- 1 large yellow onion, chopped
- 5 leaves of fresh sage, minced
- 1 15 ounce can of pumpkin purรฉe
- 16 ounce package of silken tofu
- ยฝ cup of vegetable broth
- 1 cup of plant-based milk
- 1 teaspoon of Italian seasoning
- ยฝ teaspoon of cumin
- ยฝ teaspoon of paprika
- Salt/pepper to taste
- 1 pound of pasta
- Fresh parsley, chopped for garnish
Instructions
- Over medium-high heat in a large pot, heat the olive oil. Then, add the onion and garlic. Cook until they start to brown. Then turn off the heat, add the sage, and cook for 20 seconds stirring constantly.
- Transfer the onion mixture to the cup of a blender. Add the tofu and pumpkin puree. Blend until completely smooth.
- Return the puree to the pot and add the vegetable broth, plant-based milk, Italian seasoning, cumin, paprika, salt, and pepper. Mix well and cook for 10 minutes on medium-low heat and cover with a lid. Add the juice of ยฝ lemon and mix well. Cover and cook for 5 more minutes.
