Ingredients 

  • 1 small yellow onion diced
  • 1 to 2 Tablespoons of vegan butter or oil
  • 3 carrots chopped
  • 2 garlic cloves minced
  • 6 medium tomatoes quartered
  • 1 yellow or red bell pepper chopped
  • ยฝ cup of fresh basil
  • 1 ยฝ to 2 cups of vegetable broth
  • โ…› cup of plant-based milk
  • 4 ounces of plant-based cream vegan cream cheese, optional
  • ยฝ Tablespoon of sugar
