They’re simple, low-budget, and will be adored by children and adults alike.

Made with just lime juice and zest, sugar (regular or unrefined), and water, these popsicles are free from artificial flavors and colors, a great source of vitamin C, and the perfect balance of sweet and refreshing. They’re so easy to make, too!

The Ingredients

  • Lime: Fresh lime juice is best (regular or Key Limes), especially as I use lime zest, too. However, bottled lime juice works in a pinch, but won’t taste as good! You can also make 50/50 lemon lime popsicles.
  • Sugar: I used regular sugar, though unrefined raw cane sugar, coconut sugar, maple syrup, agave, etc., will work. Adjust the amount to taste.

Recipe Variations

This simple lime popsicle recipe can be adjusted in plenty of simple yet delicious ways, including:

  • Creamy coconut lime popsicles: By replacing water with canned full-fat coconut milk.
  • Fresh herbs: i.e., mint, basil, or thyme. Add to taste.
  • Ginger: Just a small amount adds heat.
  • Tajin: Sprinkle in the mold for lime ice pops.
  • Fruit: Blend in fresh raspberries, strawberries, cherries, mango, pineapple, etc., to taste. Note, the popsicle mixture amount will increase.
  • Chia seeds: 1 tablespoon adds texture and a boost of nutrients.

How to Make Lime Popsicles

Step 1: First, zest, then juice the lime and add it to a bowl or blender with the sugar and water, mixing until fully dissolved. Taste and add more sugar if preferred.

Step 2: Pour the lime popsicle mixture into ice pop molds and leave to freeze overnight, or until fully solid (usually 4-6 hours).

Using a stickless mold? Cover the top with foil or plastic wrap and add the sticks, OR wait until they’re partially frozen (40-60 minutes). That way, they’ll be held in place.

Step 3: To enjoy the lime ice pops, let the mold sit at room temperature for a few minutes. If it sticks, run the mold under warm water for just a few seconds.

FAQs

Can I use less sugar or make sugar-free lime popsicles?

Yes, but note that sugar helps keep the popsicles from freezing into a solid block of ice. When reducing sugar/using sugar alternatives, you can maintain a softer texture by adding fats (like coconut milk).

How can I make popsicles without popsicle molds?

Pour the mixture into paper cups, muffin liners, juice boxes, or an XL ice cube tray.

Store the homemade lime popsicles in the mold or wrapped with parchment paper in a Ziplock/Stasher bag, for up to 2 months.

Ingredients 

  • 1 ½ cups of water
  • ¼ cup of sugar
  • 1 tablespoon of lime zest
  • 1 cup of lime juice

Instructions 

  • Add the water, sugar, lime zest, and lime juice to a blender.
  • Blend for 2 minutes, or until the sugar is fully dissolved. Taste and add more sugar if desired.
