It will dress your holiday feast table and add some serious color to the traditionally brown, yellow, and orange festive foods. Who knew a vegetable tray could be so beautiful and fancy? Let’s see how to prepare it and wow your friends and family!
For this color-filled wreath, we used broccoli, cauliflower, asparagus, broccolini, and cherry tomatoes to achieve those vibrant Christmassy colors, but you can play around with both the design and the color palette. That’s one of the reasons why we love this recipe so much. You can really let your creativity roam free and come up with fun and festive designs.
Other vegetable options could be green beans, red peppers, carrots, cucumbers, and many more. You can also choose whether you’d like to make a fully raw tray or a steamed one. You can also do a bit of both, leave some uncooked and others lightly steamed. The options are endless!
Another easy variation you can do with this recipe is to change the dip. Instead of this seriously delicious and creamy hummus, you could make any plant-based dip. A great pair for this wreath is a vegan ranch dressing made with dairy-free yogurt or a cashew-based sour cream. If you want to add more green and nutrients to this appetizer go for guacamole. The only prerequisite is that the dip should be creamy.
Getting in the habit of preparing a veggie tray for those special occasions is a great way to break the unhealthy festive food cycle! Begin by pouring the water into a large pot with a lid, and bring to a boil. (You can avoid the steaming process and jump to step 5 if you prefer your veggies to be raw.)
Wash all of your vegetables while you’re waiting for the water to boil, and start prepping them. Cut broccoli and cauliflower into 2” florets. Trim the ends of the broccolini and asparagus.
Once your water is boiling, carefully add in layers the cauliflower, broccoli, broccolini, and asparagus. Cover with a lid and reduce the heat to low heat. Do not lift the lid for 5 minutes.
After 5 minutes, lift the lid and carefully remove your veggies with tongs and place them in a colander. Make sure to keep your veggies organized so it’s easier for you to put the wreath together. Rinse with cold water to cool the veggies and stop them from cooking further.
Once your veggies are cool, start assembling the tray. First, place the classic hummus in the middle of the tray. Then spread the broccoli evenly all around your hummus bowl. Make sure the broccoli florets are all facing up. After you have a solid base of broccoli, start adding the remaining veggies to make your own holiday wreath.
