Carrot Fries

These cost about 50 cents to make and taste super good, way better then they look.  As soon as I made my first batch, I immediately made a second.  The sweet carrots mixed with the salt is a winner every time.

The trick is to not slice the carrot, rather peel it.  You’ll be tempted to use a knife a cut these into sticks, but that’s a fail.  Use a peeler and shave ‘em thin.

Mix and match interesting spices if you have them in the house. These would also be great with some dipping sauce, like our Cashew Ranch Dressing.

Ingredients

  • 2-4 Carrots, sliced with a peeler into long strips
  • 1.5 teaspoon of olive oil (veggie will work too)
  • Spice to taste - I used a healthy pinch of salt, pepper, and thyme

Method

Step 1

Using a vegetable peeler, slice the carrots into long thin strips and put into a large bowl.

Step 2

Add the oil and spices and mix until coated.

Step 3

Put them onto a baking sheet in a single layer.

Step 4

Bake at 350 for 7 minutes, remove from the oven and flip them, and bake for another 7 minutes. Keep an eye on them in the second round to make sure they don't burn!

Step 5

Allow to cool and crisp a little before serving.

Jake switched to a plant based diet in 1996 and quickly realized he had no idea how to cook. 16 years later and he's still trying to figure it out...
