This Mediterranean hummus flatbread is a wonderful twist on a family favorite, with an easy hummus base topped with fresh, flavorful Mediterranean-style veggies!

This hummus pizza substitutes cheese and a red sauce with a thick and creamy hummus base. Meanwhile, a vibrant mix of Mediterranean vegetables adds texture, color, and tons of flavor. The result is a Mediterranean vegan pizza loaded with nutrition and protein. Even better, this pizza without vegan cheese is dairy-free, egg-free, meat-free, vegetarian, vegan, nut-free, and can be made gluten-free (depending on the pizza crust). And best of all, it’s super quick and easy to come together as well as super budget friendly, with an estimated cost per serving around $1.50 – $2.95.

Recipe Variations

  • Pesto: Choose your favorite pesto (vegan walnut pesto, parsley pesto with arugula, vegan basil sunflower seed pesto, amazing vocado pesto pasta, etc.). Either mix it into the hummus or drizzle it over the Mediterranean hummus pizza. 
  • Garlic: Sauté a little garlic in oil while the crust bakes and then sprinkle over the hummus layer. 
  • Herbs: For extra flavor, sprinkle a tiny amount of dried Oregano, Italian seasoning, or other dried herbs over the Mediterranean flatbread pizza OR mix them into the hummus.   • Make it Gluten-Free: By using a gluten-free flatbread or crust.

Other Topping Ideas

  • Raw Vegetables: Olives, zucchini, sun-dried tomatoes, red onion (if you don’t mind it raw), avocado, corn or peas (frozen), radish, cucumber, etc.
  • Cooked vegetables: Mushrooms, zucchini, eggplant, broccoli, red onions, asparagus, etc. You could also use leftover roasted veggies like sweet potato, butternut squash (how to roast a butternut squash), sweet and salty Brussels sprouts, etc.
  • Vegan Cheese: I know I advertised this as pizza without vegan cheese. But if you have a craving for something cheesy, you could crumble over some vegan feta cheese or even a melty vegan mozzarella.
  • Nuts/seeds: To add crunch, sprinkle the vegan Mediterranean pizza with mixed seeds or crushed nuts (sunflower seeds, roasted spicy pumpkin seeds, walnuts, etc.). Pine nuts are also a delicious addition (toast in a pan until fragrant).
  • Protein: Make it heartier by topping with vegan sausage crumbles or crispy baked tofu.
  • Spice: Sprinkle a pinch of red pepper flakes over the hummus pizza.
  • Oil: You could drizzle the finished pizza with a bit of extra-virgin olive oil.
  • Balsamic vinegar: Alternatively, you could use balsamic vinegar/glaze.
  • Hummus salad pizza: Top the hummus with lots of leafy greens like arugula, micro greens, pea shoots, and even fresh herbs (parsley). Then top it off with a drizzle of lemon juice and olive oil.

My favorite add ins: If I want a little something extra on my Mediterranean hummus pizza, then I add some red onion, black olives, and a drizzle of pesto to the base ingredients! If you have some in the pantry, a sprinkle of toasted pine nuts is also great (but quite pricey). 

How to Make Pizza Without Cheese?

Step 1: First, prepare the pizza crust (or flatbread) according to the directions. Meanwhile, prepare your toppings by washing and slicing the veggies and draining the artichoke hearts (if using).

Step 2: Then, spread the hummus over the warmed pizza crust (adjust the amount used to preference). Next, spread the vegetables over the hummus layer. Finally slice and enjoy your veggie hummus pizza!

FAQs

Can I enjoy hummus pizza warm? 

Yes. Simply bake the pizza crust with the toppings already in place for a warm hummus pizza. I quite like it, but some may not.

Do I have to use raw vegetables?

Not necessarily. One of my favorite options is making a roasted Mediterranean veggie pizza. While the crust bakes, sauté your Mediterranean vegetables (bell pepper, zucchini, eggplant, cherry tomatoes, onion, etc.) in a skillet. You can then top the hummus pizza with a combination of the cooked veggies are uncooked elements (spinach and olives, etc.) for a truly delicious lunch!

What hummus is best for hummus pizza?

For the best flavor, I recommend making your own. Other than that, the choice is up to you: regular easy hummus, roasted red pepper hummus, sweet potato hummus, green pistachio hummus, beetroot hummus, lemon coriander, spicy, herby, etc.

Storage Instructions

Fridge: This hummus pizza is best enjoyed on the day it’s prepared, if you want to enjoy the warm base and cold toppings. However, you can store leftovers in an airtight container in the refrigerator for 4-5 days. Note that the base will get soggier over time.

Freezer: You can also freeze the hummus pizza if the veggie toppings are baked (which will help preserve their texture). Wrap tightly and freeze for up to 3 months.

For Meal Prep: You can always prepare and store your own pizza bases in the freezer. Likewise, the hummus can be prepared several days in advance. You could even make any roasted vegetable toppings several days in advance. That way, you just need to throw it all together – and voila!
