Why You’ll Love This Chocolate Dipped Peanut Butter Ritz Cracker Sandwiches Recipe

If you’re feeling nostalgic for easy sweet & salty snacks to make with crackers, I’ve got the one! No need to settle for dry crackers, or Ritz crackers with peanut butter, but take a few extra minutes to make this decadently delicious treat. It has just enough sweetness to curb that sweet tooth, but also healthy fats and protein from the peanut butter, to satiate.

A layer of your favorite rich and creamy peanut butter in between crisp crackers and fully coated with chocolate hits the spot every time. Your kids will love this budget friendly snack idea! These sweet and nutty goodies are a great way to boost their energy and keep them active on a school day.  And let’s be honest, the adults will be eating just as many. They make awesome on-the-go snacks, late-night nibbles, or as a last-minute party dessert.

Optional Add-ins & Variations for Vegan Peanut Butter Crackers:

  • Crushed nuts: Though this is an add-on, I love the crunchy element it adds to these Ritz cracker peanut butter sandwiches. Use any type of nuts that you like: peanuts, almonds, walnut, or cashew. You can sprinkle them on after the melted chocolate is added. Or, you can mix them with the melted chocolate too.
  • Sprinkles: This is the fun step where your kids can help you decorate the chocolate dipped PB crackers. Add sprinkles while the chocolate is still melty. The kids will have so much fun making it and even more of a blast devouring them! Colored or seasonal sprinkles can also make this a festive treat for any occasion. Try red & green for a Christmas dessert tray, or red, white, & blue for a patriotic celebration.

Step 1: First, Make the Mini Sandwiches. Spread the peanut butter thinly in between two crackers and set it aside. You should be able to come up with 12 sandwiches.

Step 2: Next, Melt the Vegan Chocolate Chips. (Here are some simple instructions for how to melt chocolate.) Start by preparing and lining the baking tray with parchment paper. Then, dip each vegan peanut butter sandwich into the vegan chocolate and line them up on the baking sheet.

Toni’s Recipe Tips for Making Peanut Butter Cracker Sandwiches

  • Add sugar for sweetness: I used peanut butter that already has some sugar in it. But if you use natural peanut butter, you can opt to add in a small teaspoon of powdered sugar.
  • Stir peanut butter first: Stir the peanut butter into the jar to distribute the oil evenly before spreading onto the crackers. Scooping the topmost part without stirring it first may cause the sandwiches to be oily and the cracker soggy.
  • Melt the chocolate with a bowl: If you do not have a microwave or broiler to melt the dairy free chocolate, you can improvise. Place the vegan chocolates in a small bowl and set that on top of a bigger bowl filled with hot water. Stir until the vegan chocolate chips melt nicely and smoothly. Amp your Sandwiches!

Here are some great ideas to take these simple sandwiches up a notch! They will come in handy especially when you are planning to make these easy treats for your next party.

  • Vegan White Chocolate: Instead of using regular vegan chocolate, you can replace it with white chocolate or use a mix of chocolates! You can try dipping them half and half (let one half solidify fully first). You can also use white chocolate to decorate your Chocolate Dipped Ritz Sandwiches by drizzling it on top of the chocolate coating too.
  • Sea Salt Flakes: Top it with sea salt flakes. That extra saltiness will go really well with the sweetness of the vegan chocolate and the richness of the peanut butter.
  • Jelly: For those who can’t enjoy peanut butter without jelly, it is easy enough to add a sweet jelly surprise in the middle of the sandwich.
  • Switch up the Butter: Try other nut butters, like almond, cashew, or hazelnut. Or skip the nuts and try cookie butters or even seed butters like this sunflower seed butter you can make yourself!
  • Bananas: Add a slice of banana together with the peanut butter filling to make them more filling and healthy.
  • Squares: You can substitute round crackers with graham crackers. They are slightly sweet but would still turn out amazing!
  • Sandwich Pops: Stick a bamboo skewer in the middle once the sandwiches have hardened to make pops. This will make them easier to handle and a lot less messy to enjoy!

Serving Suggestions for Peanut Butter Ritz Cracker Sandwiches

These yummy treats hit the spot on their own, but can also be great as part of:

Storage Instructions

Fridge: Place them in the fridge for 20-30 minutes after adding the melted vegan chocolate to allow it to set. Once they harden, the vegan peanut butter cracker sandwiches can be eaten right away or stored in the fridge. Use an airtight container for up to 3 months.

Freezer: If you plan to freeze them, wrap them in foil or plastic and put them in a freezer-friendly container. Cut little squares of parchment or wax paper and place them in between the sandwiches. This will eliminate sandwiches from sticking together.
