This Mediterranean hummus flatbread is a wonderful twist on a family favorite, with a creamy hummus base topped with fresh, flavorful Mediterranean-style veggies!

This vegetable pizza without red sauce substitutes the latter for a thick and creamy hummus base. Meanwhile, a fresh and vibrant topping of mixed Mediterranean vegetables adds texture, color, and tons of flavor. The results are a Mediterranean flatbread pizza packed withย plant-based protein and tons of vitamins and minerals while also full of flavor!

  • Pizza crust:ย You can use a homemade or store-bought vegan pizza crust for this hummus pizza. You could also use alternative crusts (like butternut squash/cauliflower-based) or a flatbread (like Greek flatbread) to make a hummus flatbread pizza.
  • Hummus:ย We used homemade creamy plain hummus. However, feel free to experiment with different flavors (garlic, red pepper, pesto, pistachio, etc.). You can also use store-bought hummus.
  • Vegetables:ย We used a combination of bell pepper (any color), tomato, baby spinach (or other baby greens like arugula/sprouts/micro herbs), and artichoke hearts (canned and drained) to make this Mediterranean pizza with hummus.

Other Toppings & Recipe Variations

  • Pesto:ย Choose your favorite pesto (walnut pesto, parsley arugula pesto, sunflower seed pesto, avocado pesto, etc.). Either mix it into the hummus or drizzle it over the Mediterranean hummus pizza.ย 
  • Garlic:ย Sautรฉ a little garlic in oil (or use this pan-roasted garlic) while the crust bakes and then sprinkle over the hummus layer.ย

How to Store?

This hummus pizza is best enjoyed on the day itโ€™s prepared, if you want to enjoy the warm base and cold toppings. However, you can store leftovers in an airtight container in the refrigerator for 4-5 days. Note that the base will get soggier over time.

You can also freeze the hummus pizza if the veggie toppings are baked (which will help preserve their texture). Wrap tightly and freeze for up to 3 months.
