Homemade Caramel Sauce2013-12-08

Mmm this caramel is soo good! My mom (you can find her on Instagram @annieup424) concocted this caramel sauce with leftover dates we had and it was amazing! Perfect to make for the holiday season and top it on anything! 🙂
- 10 dates
- 1/2 cup whole coconut milk (the thick one in a can)
- 4 Tablespoons Maple syrup
- 1/4 teaspoons cinnamon
- 4 Tablespoons reserved water from the dates
Fill a sauce pan with water just enough to cover the dates. Gently boil dates for 10 minutes.
Drain, reserving 4 Tbls. of the water. Let sit until cool to the touch. Peel and pit the dates. Chop dates and toss in a blender with the rest of the ingredients. Blend until super smooth.
Heat on med. high heat in a saucepan and bring to a boil, then simmer until thick.
