I had some cauliflower in the fridge and was not sure what to do with it. I decided to throw this rice together and throw it in a burrito with some other veggies. This dish is great in a burrito or as a side dish. It takes no time to make and is really easy. You can use any type of salsa you like. Home made or store bought. Just make sure it is a chunky style. You can also add other things to this rice. Black beans, onions, bell peppers would all be great. Enjoy!
